Bacon, Broccoli, Cheese Potato Soup

Ingredients:

1 4oz packet of Idahoan Instant mashed potatoes (I like buttery homestyle the best)
4 slices of bacon
2 broccoli crowns
1/2 c. shredded cheese
4 c boiling water

Chop broccoli crowns to desired chunks and steam. Grate cheese or buy pre-shredded. Fry bacon until crisp. Add all of these to pan. Add mashed potatoes to boiling water and combine with the rest of the ingredients. Top with more cheese if desire.

Serves 4

  1. of course you need to stir the potatoes once they are in the water. kind of left that out. I had to really think about how to make this because I have a water cooler that instantly gives me hot water. So I steam the broccoli with that and then I have my instant hot water with my instant mashed potatoes.
